spinach and avocado spaghetti

Comfort food is much needed when still home alone but why ‘comfort’ yourself with food that’s stodgy and layered in calories? It hardly makes you feel good about yourself.  That’s why this meal was both indulging and nutritious with an attractive green colour scheme too.  

For one serving, all you need is…

  • 90g wholewheat spaghetti
  • chickpeas (I used half a pack)
  • 1/2 an onion
  • a few handfuls of spinach
  • 1 avocado

It could not be simpler to prepare either (lazy people, you’re in luck). All you need to do is cook the pasta, cook the onion, cook the spinach with a dash of butter,  heat up the chickpeas and drain them, chop up the avocado. Next, combine them all in a bowl, mix up and sprinkle a bit of cheese on top. Then finally (and most importantly) enjoy 🙂
Feel free to add more ingredients for extra flavour. I probably would have done but the Monaco Grand Prix was calling me and I just wanted to get comfy on the sofa and imagine I was in Monte Carlo because the city’s beauty is too enthralling.
