With Wimbledon underway (you can read my take on it here), my time had come to give birth to these babies. Everybody knows it’s a necessity to indulge in strawberries and cream during this time of the year but strawberries and cream cupcakes? I honestly think The All England club should hire somebody to supply everybody (the spectators… the players when they deserve a treat…) with at least one of these cakes. At least once a day.
I used a basic cupcake recipe but when putting the mixture into the cases I popped chopped up British strawberries in the center before covering with more mixture. Then, once the cakes were cooked and cooled, I layered whipped up cream on top, rounded off with more strawberries. Best eaten in the sunshine.
