Celebratory cake, comfort cake, just-craving-for-some-cake cake, this is a recipe suited for all occasions.
It’s Friday and the weekend is here, making it the perfect time to bake-up something delicious.
You will need…
100g butter, 100 caster sugar, 2 eggs
1 tsp baking powder, 2tbsp cinnamon, 50g raisins
125g wholemeal flour, 1/2 tsp milk, a handful or two of walnuts
What to do…
Begin by creaming together the butter and sugar until light and fluffy before beating in the eggs. Next mix in the baking powder, cinnamon and raisins followed by the flour and milk. You now have your cake mixture. Simple wasn’t it? Turn the mixture into a baking tin (I used a loaf-style one but circular is fine) and smooth the top. Chop the walnuts up and sprinkle on top. Place in the oven for about 30 minutes and enjoy the scent of cinnamon circulating your kitchen.
Best served with a cup of tea and good company.
