What is carob? I hear you ask. Well it has been cited as the healthy alternative to chocolate and, as it has been incorporated into many of my recipes for a while now, I thought it was about time I shared a creation with you. Sure, it doesn’t have the same mouth-watering, moreish taste that coco does but when this brownie is packed with dried fruit and nuts why does it matter?
you will need…
2 table spoons of carob powder
250g mixed nuts
50g flax seeds
50g sunflower seeds
50g goji berries
125g chopped walnuts
sprinkle of pumpkin seeds
what to do…
Soak the raisins and mixed nuts overnight in cold water.
Ok, this recipe is so simple to make! Are you ready?
Mix together the dates, raisins, carob powder and nuts in a food processor with 250ml of water and blend until a smooth paste is formed. Then mix through the seeds, walnuts and goji berries.
Spread the mixture evenly on to a baking tray lined with cling film and then sprinkle the pumpkin seeds on top.
Place in the freezer for one hour.
Take out, slice, and (ultimately) enjoy!
