~The Countdown to Christmas: Chapter three~

Ho ho ho, one more sleep to go. Butterflies played tig in her stomach, fluttering around boisterously and her heart jumped up and down uncontrollably like a yoyo. She spent the entire day seemingly staring at the clock, watching time slowly move forward. Every game she played that day, every activity she got stuck into seemed irrelevant and dissatisfying. Come nighttime and she was even more restless. “Tonight will be the night I finally see Father Christmas for real!” she exclaimed, making a pact with herself not to fall asleep. But as she lay awake, her blinks turning to forceful squints in an attempt to squeeze all the tiredness out of them, she gradually drifted off. It was like a handful of magical sleep dust had been sprinkled over her face as her mother kissed her goodnight, stopping her from catching sight of dear old Father Christmas. But when she awoke, this was the last of her worries as Christmas day had finally arrived. The countdown was over.

The 25th December would not be complete without some homemade treats to nibble on at lunchtime and cheese straws topped with poppy seeds, mince pies and mincemeat cupcakes are especially fitting. To make the mincemeat sponge, you will need…

  • 60g butter
  • 60g brown sugar
  • 75g wholemeal flour
  • about 1 tbsp mixed spice
  • 3 tbsp mincemeat.
