Lentils are fantastic in casseroles, salads, burgers et cetera but, on their own, you may find them bland. The way to solve this: CHEESE. Above is a light and tasty dish which is particularly good if you can’t really bothered to prepare anything too time consuming. All you need to do is pour pre-cooked lentils onto a baking tray and finely cover with grated cheese. Add some tomatoes and place in the oven at 150 degrees for about 10 minutes (until the cheese has melted and the tomatoes look slightly roasted). I served this with asparagus which I conveniently cooked while the lentils were in the oven.
Serve up and sprinkle with oregano for extra flavour.
